You can make this recipe with bone-in, skin-on chicken thighs and drumsticks for the best flavor, or use boneless breasts or thighs if you prefer. See the NOTES section for pressure cook times for different cuts.

  3. Thicken the sauce: After pressure cooking, remove the chicken and simmer the sauce on sauté to reduce and concentrate the flavors. A slightly flowy, stew-like sauce is traditional and fantastic with rice.
  4. Use plenty of garlic: Whole, lightly smashed garlic cloves add depth — add more if you like bold garlic flavor.
  5. Vinegar choice: Cider vinegar is recommended for its milder, fruitier profile; avoid substituting with plain white vinegar if you want the intended flavor.
  6. Subtle sweetness: Brown sugar balances the tang and saltiness; you can substitute palm sugar in equal amounts if preferred.

Step #1 — Marinate & sear the chicken

  • Marinate: Combine soy sauce, cider vinegar, brown sugar, black peppercorns, garlic and bay leaf. Mix the brown sugar into the soy sauce first, then toss with the chicken. Marinate in the refrigerator for at least 1 hour or overnight for best flavor.
  • Sear: Use the Instant Pot’s SAUTÉ function on high. Add oil and sear the marinated chicken (shake off excess marinade) until golden on both sides. Set aside.

Step #2 — Pressure cook & thicken sauce

  • De-glaze the pot: Add the remaining garlic to the pot and sauté briefly, then pour in water and scrape the bottom and sides to release any browned bits. This prevents burn warnings during pressure cooking.
  • Pressure cook: Return the seared chicken to the pot with the reserved marinade and bay leaves. Secure the lid and pressure cook on HIGH for 6 minutes for bone-in pieces, followed by a 10-minute natural pressure release. Release remaining pressure manually and open the lid carefully.
  • Thicken the sauce: Remove the chicken to a serving bowl. Turn SAUTÉ back on and simmer the sauce until it reaches your desired consistency. A slightly thin, stew-like sauce pairs best with rice, but adjust to taste.
  • Serve: Pour the reduced adobo sauce over the chicken and serve with steamed white rice. Garnish with chopped Thai chilies if you like extra heat.

What to serve with Chicken Adobo

Steamed white rice is the classic and best accompaniment for Filipino chicken adobo, soaking up the flavorful sauce. Mashed potatoes also work well for a different take.

How do you thicken adobo?

Thicken the sauce by simmering it on the Instant Pot’s SAUTÉ setting until it reduces to the consistency you prefer. Traditional adobo usually has a flowy, stew-like sauce rather than a very thick glaze.

Ingredients

  • 2 pounds chicken (about 4 thighs & 2 drumsticks, skin on, bone in)
  • 10 cloves garlic, peeled and lightly smashed
  • 2 tbsp dark soy sauce (optional, for color)
  • 1/3 cup soy sauce (regular)
  • 1/3 cup cider vinegar
  • 1/2 cup water
  • 4 bay leaves
  • 1/2 tbsp whole black peppercorns
  • 1.5 tbsp brown sugar
  • 2 tbsp avocado oil (or neutral oil)

Garnish (optional)

  • 2 Thai chilies, roughly chopped

Instant Pot DUO 6 quart (or similar 6-quart electric pressure cooker)

Instructions

  1. Marinate the chicken: Rinse and pat dry the chicken. In a bowl, mix soy sauce, cider vinegar, brown sugar (dissolved in soy first), black peppercorns, 1 bay leaf (broken), and 5 smashed garlic cloves. Toss the chicken to coat and marinate for at least 1 hour or overnight in the fridge.
  2. Sear the chicken: Using the Instant Pot on SAUTÉ (HIGH), add oil and sear the chicken (shaking off excess marinade) until golden on both sides. Set aside.
  3. De-glaze the pot: Add the remaining smashed garlic to the pot and sauté 30 seconds. Pour in water and scrape the bottom and sides with a spatula to remove any browned bits. Cancel the SAUTÉ function.
  4. Pressure cook: Return the seared chicken to the pot, pour the reserved marinade over it, add remaining bay leaves, and secure the lid. Pressure cook on HIGH for 6 minutes for bone-in pieces. Let sit for a 10-minute natural pressure release, then manually release remaining pressure and open the lid carefully.
  5. Thicken the sauce: Remove the chicken and set aside in a serving bowl. Turn SAUTÉ back on high and simmer the sauce until it reaches your preferred consistency. We prefer a flowy, stew-like sauce.
  6. Serve: Pour the sauce over the chicken and serve with hot steamed rice. Garnish with chopped Thai chilies if desired.

Notes

  1. Boneless, skinless chicken: For boneless thighs or breasts, reduce the pressure cook time to 4 minutes followed by 10 minutes natural pressure release.
  2. Soy sauce: If using low-sodium soy sauce, adjust salt at the end while simmering the sauce to taste. Regular soy sauce is salty enough so additional salt is usually unnecessary.
  3. Sugar substitute: Brown sugar can be substituted with equal amounts of palm sugar.
  4. Vinegar: Use cider vinegar for best results; avoid swapping for plain white vinegar if you want the intended flavor profile.
