Gluten-free mudslide cookies are flourless chocolate cookies that are rich, fudgy, and satisfy serious chocolate cravings. These treats are made without wheat, and the recipe shown here is also dairy-free and nut-free when you choose allergen-safe chocolate. The result is a glossy, crinkled cookie with a chewy center and chocolatey pockets throughout.
Years ago I discovered a mudslide cookie at a gluten-free bakery and wanted to recreate that intense chocolate flavor at home. After testing several versions and combining techniques, I developed a recipe that captures the shiny, cracked top and fudgy interior I remembered—only easier to make and perfect for home baking.

Notes on ingredients and substitutions for flourless chocolate cookies:
- Powdered sugar – This acts like the “flour” in these cookies. If you avoid corn, look for powdered sugar made with a different anti-caking starch (some brands use tapioca starch).
- Cocoa powder – Both natural and Dutch-process cocoa work well; choose the flavor profile you prefer.
- Egg whites – Room-temperature egg whites provide structure and shine. I don’t recommend substituting them for this particular recipe.
- Dark chocolate – Use dairy-free dark chocolate morsels or chunks to keep the cookies dairy-free.
- Mini chips – Small semisweet or dairy-free mini chips give texture and chocolate bits without adding nuts.
Using a mix of chocolate sizes—mini chips plus larger morsels or chopped chocolate—creates the attractive bumpy look without adding nuts.

If you need allergen-safe chocolate, pick a brand that is certified gluten-free and dairy-free. These chips melt well and add pockets of melty chocolate in the finished cookie. You can find such chips at many grocery stores or online; buy a few bags when they’re available so you’re always ready to bake.
These cookies are intentionally portioned to be a satisfying, sweet treat rather than a giant bakery-style cookie. I use a medium cookie scoop (about a #40 scoop) to portion the dough, which yields roughly 18 cookies per batch. Scoop the dough onto parchment paper that has been lightly sprayed with nonstick cooking spray—these cookies have a tendency to stick without both parchment and a quick spray.

Before baking, the batter will feel thick and slightly sticky. After baking at 350°F for about 12 minutes, the cookies develop glossy tops and cracks—signs they are done. If you prefer a crisper cookie, add a minute or two to the bake time, but they’re best soft and chewy fresh from the oven. Note that they do firm up and become slightly crisper over the next day or two.

One batch makes about 18 medium cookies. You can make them smaller or larger—adjust the baking time by a minute or two accordingly and watch for glossy, cracked tops and set edges. Store cooled cookies in an airtight container at room temperature for a few days, or freeze baked cookies for longer storage; thaw at room temperature when ready to enjoy.

These flourless mudslide cookies are versatile—use the same batter idea with different chocolate mixes or sizes to vary texture and appearance. They’re a great option for allergy-friendly gatherings because with the right chocolate they can be gluten-free, dairy-free, and nut-free.
Tip: If your cookies spread too much, try chilling the scooped dough on the lined sheet for 10–15 minutes before baking or use a slightly larger scoop for thicker cookies. Also allow the baking sheet to cool between batches if you’re baking multiple sheets in succession for more even results.

I’ve used these chocolate morsels in many of my favorite desserts. Once you have a supply of good-quality, allergen-safe chips, you’ll find lots of ways to add them to pies, cakes, bars, and other cookies.

Gluten-free Flourless Chocolate Cookie Recipe:
Yield: 18 cookies
Flourless Chocolate Mudslide Cookies (gluten-free, dairy-free)
Prep time: 10 minutes • Cook time: 12 minutes • Total time: 34 minutes
These flourless cookies are glossy, cracked on top, and fudgy inside. Made with powdered sugar, cocoa, egg whites, and plenty of chocolate, they’re an easy gluten-free dessert that’s perfect for sharing.
Ingredients
- 2 3/4 cups powdered sugar
- 3/4 cup cocoa powder
- 1/4 tsp salt
- 3 large egg whites, room temperature
- 2 tsp pure vanilla extract
- 3/4 cup mini semi-sweet chocolate chips (dairy-free if needed)
- 1/2 cup dark chocolate chips or morsels (dairy-free if needed)
Instructions
- Preheat oven to 350°F (175°C). Line two cookie sheets with parchment paper and lightly spray the parchment with nonstick cooking spray.
- In a mixer bowl, combine the powdered sugar, cocoa powder, and salt. Mix on low until well blended. A whisk attachment works well if you have one.
- Add the room-temperature egg whites and vanilla extract. Mix on low until fully incorporated. The batter will be thick and slightly sticky.
- Fold in the mini chips and dark chocolate chips by hand with a spatula.
- Use a medium cookie scoop (#40) to portion the dough onto the prepared sheets, leaving space for spreading. On a large sheet you can fit about 12; on a second sheet place the remaining dough.
- Bake one sheet at a time in the preheated oven for about 12 minutes, until the tops are glossy and cracked and the edges are set. Cookies will firm as they cool.
- Let the cookies sit on the pan for 2–3 minutes after removing from the oven, then transfer the parchment with cookies to a cooling rack. Cool completely before storing.
Store cooled cookies in an airtight container for several days, or freeze baked cookies in a sealed bag or container for longer storage. These flourless mudslide cookies are an easy, allergy-considerate way to enjoy a deeply chocolatey treat.

I hope you and your friends and family enjoy these flourless cookies as much as mine did!
