Instructions

  • LEMON AND HERB COMPOUND BUTTER: In a small bowl, combine the softened butter with minced shallots, basil, oregano, thyme, chives, lemon zest and lemon juice. Mix thoroughly until the herbs and citrus are evenly distributed through the butter.
    Transfer the flavored butter onto a square of parchment paper and roll it into a cylinder about 1 inch in diameter. Twist the ends of the parchment to seal. Chill the butter for about an hour, or until firm. When ready to use, unwrap and slice into 1/4-inch coins. Alternatively, keep the butter soft and spread it on the salmon just before serving for a quicker option.

  • Preheat the oven to 400°F (about 200°C) if using the oven method, or prepare an outdoor grill to medium-high heat if grilling outside.
  • OVEN METHOD: Heat 1 tablespoon of olive oil in each of two large ovenproof sauté pans over medium-high heat. Pat the salmon fillets dry and season both sides lightly with coarse salt and freshly ground black pepper. When the pans are hot, place the fillets flesh side down and sear for 3 to 5 minutes, until they develop a light golden crust. Flip the fillets so the skin side is down.
    Place one coin of the lemon and herb compound butter on each fillet, then transfer the pans to the preheated oven. Roast until the salmon flesh is opaque and flakes easily with a fork but remains moist in the center.
  • OUTDOOR GRILL METHOD: Lay salmon fillets on a sheet of heavy-duty foil and brush or rub with the remaining tablespoon of olive oil. Season with salt and pepper. Place the foil with the fillets on the preheated grill and close the lid. Cook for about 10 minutes, then uncover and place one coin of compound butter on each fillet. Close the lid and continue to cook for another 5 to 10 minutes, depending on fillet thickness, until the flesh is opaque and flakes easily but remains moist.

  • Remove salmon from the oven or grill and let rest for a minute. The compound butter will melt over the fillets, adding bright citrus and fresh herb flavor. Serve immediately with your choice of sides—steamed vegetables, roasted potatoes, or a crisp salad complement the dish well.

To save time, leave the compound butter soft and spread it over hot salmon just before serving. Preparing the butter a day ahead intensifies the flavors and makes dinner quicker to assemble.


For even cooking, choose salmon fillets of similar thickness. If you prefer more char, finish fillets briefly skin-side down on a hot grill. Always check doneness by ensuring the flesh is opaque and flakes easily with a fork.
