This croissant stuffing bakes up tender inside, crisp on top, and layered with savory-sweet depth from the onions and herbs. It’s the kind of side that becomes the talk of the table and often gets requested again.

I first made this for Thanksgiving with extra croissants I had on hand. It quickly became a family favorite — even the picky eaters asked for seconds. If you want a holiday stuffing that feels elevated but stays approachable, this one fits the bill.

How to Make Croissant Stuffing

The method breaks down into five straightforward steps. Read through before you begin so timings line up.

Step 1: Caramelize the onions – Melt half the butter in a large skillet over medium heat. Add thinly sliced yellow onions, a pinch of salt, a sprig of thyme, and a sprig of rosemary. Cook gently, stirring occasionally, until the onions are deeply golden and jammy, about 1 to 1½ hours. Stir in the balsamic vinegar for a minute, then remove from heat and set aside.

Step 2: Dry the croissants – Cube the croissants into roughly 1-inch pieces and spread them on a baking sheet. Dry them in a low oven (about 225°F) until they feel dry and slightly crisp, around 1½ hours. This removes excess moisture so the stuffing holds texture.

Step 3: Prepare the aromatics – Melt the remaining butter in another skillet. Add diced onion, diced celery, and remaining salt, and cook until softened, about 4–6 minutes. Add minced garlic, chopped sage, minced thyme and rosemary, and freshly ground black pepper; sauté just until fragrant, 1–2 minutes. Remove from heat.

Step 4: Mix together – In a large bowl, combine the dried croissant pieces, caramelized onions, aromatic vegetable mixture, stock, beaten eggs, and most of the Parmesan cheese. Fold gently until everything is evenly moistened. Transfer to a 9 x 13-inch baking dish, sprinkle the remaining Parmesan on top, and let the mixture sit for 10–15 minutes to absorb the liquid. You can also cover and chill for a few hours if making ahead.

Step 5: Bake – Preheat the oven to 350°F. Cover the dish and bake 30 minutes, then uncover and bake an additional 20–30 minutes until the top is golden and crisp. Let rest a few minutes before serving.

Ingredients

  • 8 tbsp (1 stick) unsalted butter, divided
  • 6 medium yellow onions, cut in half and thinly sliced
  • 2 ½ tsp kosher salt, divided
  • 1 sprig fresh thyme
  • 1 sprig fresh rosemary
  • 2 tbsp balsamic vinegar
  • 8 croissants, cubed
  • 1 small onion, diced
  • 2 ribs celery, diced
  • 3 cloves garlic, minced
  • 2 tbsp chopped fresh sage
  • 1 tbsp minced fresh thyme
  • 2 tsp minced fresh rosemary
  • 1 tsp freshly ground black pepper
  • 3 cups turkey or chicken stock
  • 3 large eggs, beaten
  • 1 ½ cups grated Parmesan cheese, divided

Instructions

  1. Caramelize the onions: Melt 4 tbsp butter in a large skillet over medium heat. Add the sliced yellow onions and cook until translucent, 4–6 minutes.   4. Assemble: Preheat the oven to 350°F. In a large bowl combine the dried croissant pieces, caramelized onions, aromatics, stock, beaten eggs, and 1 cup Parmesan. Fold to combine and transfer to a 9 x 13-inch baking dish. Sprinkle the remaining ½ cup Parmesan on top. Let sit 10–15 minutes to absorb, or cover and refrigerate for 3–4 hours if making ahead.
