Is there anything more summery than ripe blackberries and bright lemons? This easy vegan blackberry lemon cobbler brings those two flavors together in a simple, impressive dessert. The berries are tossed with sugar, cornstarch, and fresh lemon juice so they release their juices and form a lush sauce as they bake. The topping is a tender, biscuit-like cobbler dough — light and fluffy inside with a golden, slightly crisp exterior. Lemon zest in the batter adds a fresh brightness, and a sprinkle of demerara sugar gives the finished cobbler a pleasant crunch. Serve it warm with vegan vanilla ice cream or let it cool and enjoy it any time.

Blackberries can be tart when they aren’t at their peak, so summer is the perfect time to enjoy this dessert. If you’re hosting an outdoor dinner or potluck, cobbler is a forgiving and transportable option — you can bake it ahead and reheat portions as needed. The berries make their own sauce, so there’s no need for extra syrup or fillings. This recipe is deliberately straightforward: toss the fruit, whisk together a one‑bowl topping, drop scoops of batter over the berries, sprinkle with sugar, and bake. Even beginners can produce excellent results.

This dessert has a bit of nostalgia for me — my mother made fruit cobblers all summer long, and I still get excited on cobbler days. The version here feels a little more refined than the cobblers I grew up with, but the delighted reaction from my daughter when she tried it reminded me of those simple comforts. It’s a family-friendly, crowd-pleasing dessert that highlights seasonal fruit.

Ingredients
- 5 cups blackberries*
- 1/2 cup + 3 tablespoons organic cane sugar, divided
- 1 tablespoon cornstarch
- 1 tablespoon fresh lemon juice
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup cold vegan butter
- 3/4 cup non-dairy milk (soy milk works well)
- 2 teaspoons lemon zest
- Demerara sugar for topping
Instructions
- In a large bowl, combine the blackberries with 1/2 cup sugar and the cornstarch. Drizzle the lemon juice over the berries and gently toss to coat. Let the mixture sit for 10–15 minutes so the berries release their juices.
- Preheat the oven to 375°F (190°C).
- In a separate large bowl, sift or whisk the flour, then stir in the remaining 3 tablespoons of sugar, baking powder, and salt.
- Break the cold vegan butter into small pieces and add them to the flour mixture. Use your fingers or a fork to work the butter into the flour until the texture resembles coarse sand and the butter is evenly distributed.
- Pour the non-dairy milk into the flour-butter mixture and stir until combined. The batter will be looser than traditional biscuit dough.
- Fold in the lemon zest, distributing it evenly through the batter.
- Grease a 9-inch baking dish. Pour the macerated blackberries and their juices into the dish, spreading them into an even layer.
- Use an ice cream scoop or spoon to drop dollops of the cobbler batter over the berries, leaving small gaps so steam can escape and the filling can bubble through.
- Sprinkle the top with demerara sugar for a crunchy finish.
- Bake for 45–55 minutes, or until the topping is golden brown and the berry filling is bubbling around the edges.
- Serve warm with vegan vanilla ice cream, or allow the cobbler to cool and serve at room temperature. Leftovers can be refrigerated and reheated.
Notes
*Fresh blackberries give the best texture and flavor, but frozen berries can be used in a pinch. If using frozen, defrost them first and drain any excess water before proceeding so the filling doesn’t become too thin.
For a brighter lemon flavor, increase the lemon zest to 1 tablespoon, or add a splash more lemon juice to the berry mixture to taste. If you prefer a less sweet dessert, reduce the sugar in the filling by 2–4 tablespoons.
Storage: Cover and refrigerate leftover cobbler for up to 3 days. Reheat individual portions in the microwave or warm in a 325°F oven until heated through.
