A creamy, peanut butter-forward fat bomb that tastes like a tiny peanut butter cheesecake. Smooth cream cheese and 100% unsweetened peanut butter form the base while a keto-friendly powdered sweetener balances the flavor. Optionally, roll each piece in crushed sugar-free chips, chopped nuts, or cocoa powder for a more finished look and extra texture.

Ingredients

  • 4 ounces cream cheese, room temperature
  • 1/4 cup 100% unsweetened peanut butter
  • 2 tablespoons keto-approved powdered sweetener (for example, Lakanto)
  • Crushed sugar-free chocolate chips to coat (optional)

Instructions

  • Mix the cream cheese, unsweetened peanut butter, and powdered sweetener in a small bowl until smooth. Use a spatula or hand mixer for an ultra-creamy texture.
  • If the mixture feels too soft to shape, chill it in the freezer for about 20–30 minutes until it firms up slightly but is still scoopable.
  • Using a cookie scoop or tablespoon, portion the mixture and roll into 12 even-sized balls with lightly oiled or chilled hands to prevent sticking.
  • Roll each ball in crushed sugar-free chocolate chips, finely chopped nuts, or cocoa powder if desired. Chopped pecans or unsweetened shredded coconut also make tasty coatings.
  • Store the fat bombs in an airtight container in the refrigerator. They’ll hold for at least a week, or freeze for longer storage. Enjoy whenever you need a quick, low-carb bite.

Tip: For a firmer, truffle-like texture, briefly freeze the balls after rolling, then toss in the coating so they stay neat and uniform.
