My Mom’s Beef Stroganoff Recipe (Tweaked for Keto)
This version stays true to the Russian family favorite while keeping carbs low. It’s quick to prepare when you already have cooked beef on hand, and it’s easy to adapt if you’d like to brown raw beef yourself.
Ingredients
- 2 tbsp olive or avocado oil
- 1 small onion, sliced
- 1 tsp minced garlic
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp tomato paste
- 2 tbsp red wine vinegar
- 1 cup beef stock
- 8 ounces sliced mushrooms
- 1 lb cooked beef, thinly sliced (or raw thinly sliced beef if cooking from scratch)
- 1/2 cup sour cream
Instructions
- Heat the oil in a frying pan over medium-high heat. Add the sliced onion, minced garlic, thyme, salt and pepper. Cook until the onions are softened and translucent.
- If using raw thinly sliced beef, add it now and cook until browned. Otherwise, continue with the cooked beef later.
- Add the tomato paste, red wine vinegar and beef stock, stirring to combine. Add the sliced mushrooms.
- Reduce the heat and simmer for about 15 minutes, until the mushrooms are tender and the sauce has reduced slightly.
- If you used cooked beef, add the sliced beef now and simmer a few more minutes just to heat through. Taste and adjust seasoning.
- Remove the pan from heat and stir in the sour cream until the sauce is smooth and creamy. Do not boil after adding sour cream to prevent curdling.
Note: If starting from raw beef, brown it first and then proceed with the mushrooms and liquid, allowing extra simmer time until the meat is cooked through.
Tips and Variations
- For deeper flavor, deglaze the pan with a splash of red wine or additional vinegar after browning the meat, scraping up the browned bits.
- Use a mix of mushroom varieties for more texture and complexity.
- For a dairy-free version, substitute full-fat coconut cream or a cashew cream, keeping in mind the flavor will change.
- Leftovers taste great and the sauce often improves after a day in the fridge. Reheat gently on low heat to avoid breaking the sauce.
