St. Patrick’s Day Leprechaun Chocolate Bark Recipe

Even though I’m not Irish, I love celebrating St. Patrick’s Day. Around March 17th I make all sorts of themed treats, from main dishes to desserts. This Leprechaun Chocolate Bark is an easy, festive sweet—full of green accents and gold coin-like sprinkles that make it perfect for the holiday.

When I make candy bark, I like to have all supplies ready: candy melts or chocolate chips, a rubber spatula, parchment-lined baking sheet, and toppings. Bulk food stores and craft shops are great places to find colored candy melts, sprinkles and jelly beans. For this leprechaun bark I used dark chocolate candy melts for the base, green and white candy melts for decoration, green jelly beans, and gold round sprinkles that resemble coins—simple but very effective for a St. Patrick’s Day theme.

How to Melt Chocolate in a Microwave

Melting candy melts in the microwave is quick and reliable when done gently. Place the candy melts in a glass bowl and set the microwave to 50% power. Heat for two minutes, then remove and stir thoroughly with a rubber spatula. Return to the microwave for another two minutes at 50% power and stir until smooth. If a few small unmelted bits remain, let the bowl sit a minute and stir again—the residual heat will often finish the melting. Avoid high power or rapid heating to prevent scorching or grainy texture.

How to Make the Bark

  1. Line a 17×12 or 18×13 inch baking sheet with parchment paper. Pour the melted dark chocolate onto the parchment and spread it evenly with a spatula.
  2. Small ripples and ridges are fine—they add texture and make the bark more interesting.
  3. Melt the green candy melts in a smaller glass bowl using the same low-power microwave method. Drizzle the green melts across the dark chocolate in streaks.
  4. Melt the white candy melts the same way and drizzle them over the dark chocolate. The look does not need to be neat; a slightly messy swirl adds charm.

Scatter the green jelly beans and gold circle sprinkles across the melted layer while it is still soft so they adhere. If the base layer hardens before you add toppings, see the quick tip below for an easy fix.

Quick Tip

If the dark chocolate has already set by the time you want to add jelly beans and sprinkles, warm the baking sheet briefly to re-soften the surface. Place the tray in a preheated 350°F oven for about 30 to 60 seconds—just long enough to soften the top layer but not melt everything. Remove promptly and press the toppings into the softened chocolate so they stick.

Allow the leprechaun chocolate bark to chill until completely firm. Once set, break it into irregular chunks or cut into pieces as desired. The natural, varied shapes make for attractive presentation. This bark makes a fun, shareable snack at home and a cheerful homemade gift to bring to work or parties.

Ingredients

  • 3 cups dark chocolate candy melts (or chips)
  • 1/2 cup green candy melts
  • 1/2 cup white candy melts

Instructions
