Autumn recipes are everywhere right now—pumpkin, spice and everything cozy have taken over my feeds. I, however, have been leaning the other way: last week was dedicated to a simple no-churn vanilla ice cream experiment and this week I’m sharing another no-bake, ultra-easy treat: Peanut Butter Clusters. No pumpkin in sight—just four ingredients and a five-minute assembly.

These Peanut Butter Clusters came together in just over twenty minutes from idea to taste test. They’re remarkably simple: combine creamy peanut butter with cornflakes and sweeten with icing sugar and maple syrup. The result is a crunchy, slightly chewy little bite that works as a quick grab-and-go snack, a lunchbox treat, or a light dessert. Drizzle with chocolate sauce for an extra indulgence if you like.

The icing sugar helps create a smooth, melt-in-the-mouth texture while the maple syrup adds depth and a warm sweetness that balances the saltiness of the peanut butter. Using cornflakes keeps the clusters light and crispy without adding complex ingredients—so they feel almost like a treat with a hint of wholesome crunch.
A few quick notes before the recipe: use a peanut butter you enjoy eating straight from the jar—creamy works best for a cohesive texture, but chunky peanut butter will add extra nutty bits. - 6 Tbsp. Icing Sugar
- 3 Tbsp. Maple Syrup
- 2 & ½ Cups Cornflakes
Instructions
- In a medium bowl, mix the peanut butter, icing sugar and maple syrup until smooth and well combined.
- Gently fold in the cornflakes until evenly coated. Be careful not to crush the flakes; a few whole pieces make the best texture.
- Form the mixture into small balls or clusters using a spoon or a small cookie scoop. Place them on a tray lined with parchment paper.
- Chill in the refrigerator for about 2 hours, or until set. Store in an airtight container in the fridge for up to a week.
