- Roast until fork-tender: about 45 minutes for smaller beets, up to 1 hour for larger ones.
- Let cool at room temperature for about 20 minutes. When warm but manageable, rub the skins off with a clean towel; any stubborn bits can be trimmed with a paring knife. Slice into 1/4-inch rounds and set aside to cool completely.

Ingredients
- 1 bunch beets (about 3–4 medium beets)
- 3 Tbsp olive oil, divided
- ½ tsp table salt, plus a pinch, divided
- 4 oz goat cheese
- 2 Tbsp plus 1 tsp chopped fresh savory herbs (such as rosemary, sage, and/or thyme), divided
- 2 medium shallots, thinly sliced into rings
- 2 Tbsp cornstarch
- 1 cup vegetable oil (for frying)
- 2 Tbsp lemon juice
- 1 tsp Dijon mustard
- 4 cups loosely packed arugula
Instructions
- Preheat the oven to 400°F.
- If the beets have greens, trim them off and save for another use. Scrub beets clean with a towel. Place beets on a large piece of foil, drizzle with 1 tablespoon olive oil, and sprinkle with 1/4 teaspoon salt. Seal the foil and roast for 45 minutes to 1 hour, until a fork pierces easily. Let cool about 20 minutes.
- When cool enough to handle, rub the skins off with a clean towel. Slice the beets into 1/4-inch rounds and allow to come to room temperature.
- Crumble goat cheese into bite-size pieces and toss with 2 tablespoons chopped herbs in a bowl so the cheese is well coated. Set aside.
