Ingredients

  • 110 g full-fat coconut milk or whipped heavy cream
  • 50 g avocado
  • 1/2 teaspoon vanilla extract
  • 1/2-3/4 teaspoon peppermint extract to taste
  • 1/2 teaspoon lemon juice freshly squeezed
  • pinch flaky sea salt or salt of choice
  • 2-4 tablespoons powdered xylitol or powdered sweetener of choice, to taste
  • 30-45 g chocolate chips or chopped cacao nibs, to taste

Instructions

  • If your coconut milk has separated, gently warm the can in a water bath until the solids and liquids come together. Let it return to room temperature before blending so the texture stays silky.
  • Combine coconut milk (or whipped cream), avocado, vanilla, peppermint extract, lemon juice, a pinch of salt and your powdered sweetener in a blender or use an immersion blender. Blend until completely smooth and taste to adjust sweetness and mint intensity.
  • Stir in the chocolate chips or cacao nibs. Transfer the mixture to a sealable container or portion into small moulds. Freeze until set, about 2 hours for a soft, scoopable texture; mini moulds will firm faster. If frozen overnight, let it sit at room temperature 10–20 minutes before scooping.
  • One batch makes about 1–2 servings depending on scoop size. Scale the ingredient amounts proportionally if you want more servings.

Notes

*Coconut milk brands vary widely in creaminess and flavor. Choose a full-fat brand with a rich texture for best results; some brands whip more easily and give a milder coconut flavor. Heavy cream is a suitable substitute if dairy is acceptable.
