These no-bake peanut butter energy bites are one of my favorite easy snacks: nutritious, portable, and delicious. They require just four main ingredients, no oven, and very little hands-on time. I first started making them in college when my kitchen options were limited, and they’ve remained a staple ever since.

How to Make Peanut Butter Energy Bites

Start by measuring the oats, peanut butter, honey, and chocolate chips into a medium mixing bowl. Stir until everything is evenly combined and the mixture resembles a soft cookie dough.

Pro tip: Measuring sticky ingredients on a kitchen scale makes cleanup easier. Place the bowl on the scale and zero it out, then add peanut butter and honey by weight. For reference, 3/4 cup natural peanut butter is roughly 192 grams.

If you’d like to boost the nutritional profile without changing the taste, stir in a small amount (about 1/4 cup) of ground hemp seeds, ground flaxseed, wheat bran, or chia seeds. These add fiber, healthy fats, and a subtle texture while remaining mostly undetectable in flavor.

If the mixture feels too sticky to shape, chill it in the refrigerator for an hour or in the freezer for about 20 minutes to firm up slightly. Use a spoon or a cookie scoop to form the dough into roughly 24 tablespoon-sized balls and arrange them on a lined tray or small baking sheet.

Refrigerate the formed bites for about an hour to set, or freeze for 20 minutes for quicker results. Once firm, transfer them to an airtight container or freezer bag.

How to Store

Store energy bites in the refrigerator for up to two weeks, or in the freezer for up to three months. Keeping most of the batch in the freezer is a convenient way to control portions — simply pull one or two out when you want a quick snack. They’re tasty chilled or slightly frozen.

Ingredients

Instructions

  3. Line a baking dish or rimmed cookie sheet with wax or parchment paper. Use a cookie scoop, tablespoon, or your hands to form the dough into about 24 balls and place them in a single layer on the prepared sheet.

Notes

Depending on the thickness of your peanut butter, you may need to adjust the honey or peanut butter slightly to get the right binding consistency. Natural peanut butter with oil separation works well when stirred thoroughly.

Want to portion more easily? Use a small cookie scoop to make uniform balls. A kitchen scale is handy for measuring sticky ingredients by weight if you prefer less cleanup.
