Ingredients
- 1 lb puff pastry, thawed if frozen
- 2 tablespoons salted butter
- 8 oz baby bella (cremini) mushrooms, finely chopped
- 1 leek, white and light green parts thinly sliced and rinsed
- 1 tablespoon minced garlic
- 8 eggs, plus 1 extra for egg wash
- 2 teaspoons Dijon mustard
- 2 tablespoons grated white cheddar cheese
- Splash of cream (or milk)
- Salt and pepper, to taste
Instructions
Make the Filling
- Whisk the eggs with a splash of cream, the Dijon mustard, minced garlic, grated cheddar, and a pinch of salt and pepper in a medium bowl. Set aside.
- Melt the butter in a skillet over medium heat. Add the chopped mushrooms and sliced leeks and sauté for 5–7 minutes until softened and any liquid has mostly evaporated.
