Meringue mushrooms are traditionally used to decorate bûche de Noël and other holiday desserts, and they also make a delightful, handmade addition to your Christmas table. They’re lightweight, pretty, and surprisingly simple once you know the technique.

Let’s Make Meringue Mushrooms!

- Step 1: Preheat the oven to 200°F (100°C). In a clean, dry bowl using a stand mixer or hand mixer, whip the room-temperature egg whites with the cream of tartar and a pinch of salt until foamy. Slowly add the sugar while mixing and continue to beat on high until you reach glossy, stiff peaks.

- Step 3: Line a baking sheet with parchment paper. Fit a piping bag with a large round tip and pipe out mushroom caps and separate stems. For caps that end up peaked, dampen a fingertip and gently smooth the peak so the cap is flatter.

- Step 4: For red toadstools, pipe red caps and white stems separately. If you want white spots on red caps, switch to a very small round tip (or use a toothpick) and add tiny white dots of meringue. Bake at 200°F (100°C) for about 1.5–2 hours, until fully dry. Do not open the oven while baking; they should peel off the parchment easily when done.

Assembling
Allow the meringues to cool completely. Melt a small amount of chocolate in short bursts in the microwave or in a double boiler, stirring until smooth. Use a sharp knife to carve a shallow hole in the center of the bottom of each cap — be gentle so you don’t cut through.
Use the melted chocolate as adhesive: either spoon a small dab onto the bottom of the cap and insert the stem, or dip the tip of the stem into chocolate and press it into the cap. Place assembled mushrooms upside down while the chocolate sets, then return them upright and, if desired, dust with cocoa powder for a traditional look.

How to Make Meringue Mushrooms (Red Toadstools & Classic Mushrooms)
Equipment

- ½ cup (100 g) granulated sugar
- ¼ teaspoon cream of tartar

- 2 oz (57 g) melted chocolate, for assembly
Instructions
- Preheat the oven to 200°F (100°C).
- Whisk the egg whites with salt and cream of tartar until foamy. Gradually add the sugar while mixing and continue until stiff, glossy peaks form.
- If making red toadstools, remove half the meringue and color it with red gel, then transfer both white and red meringues to separate piping bags.
- Line a baking sheet with parchment. Pipe caps and stems; smooth any peaks on the caps with a damp fingertip if needed.
- For toadstools, pipe stems in white, caps in red, then use a tiny round tip or toothpick to add small white dots to the red caps.
