For the crust

  • 1 1/2 cups vegan graham cracker crumbs* (or crushed vegan cookies)
  • 5 tablespoons melted vegan butter or coconut oil
  • 1/4 cup granulated sugar

For the filling

  • 32 ounces (4 x 8‑oz packages) vegan cream cheese (Tofutti recommended)
  • 1 (13.5 oz) can coconut cream (use the thick cream)
  • 1 1/4 cups granulated sugar
  • 4 tablespoons cornstarch
  • 2 teaspoons pure vanilla extract
  • 3 tablespoons fresh lemon juice (about 2 small lemons)

Optional fresh strawberry sauce

  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F. Wrap a 9‑inch springform pan with 1–2 layers of aluminum foil, covering the bottom and sides. Cut a circle of parchment for the bottom and lightly oil it.
  2. For the crust: In a medium bowl combine cookie crumbs, melted vegan butter and sugar. Stir until combined, then press firmly and evenly into the bottom of the prepared pan, pressing the crumbs up the sides slightly. Set aside.
  3. For the filling: In the bowl of an electric mixer (or using a handheld mixer), beat the vegan cream cheese until smooth, about 1 minute. Add coconut cream, sugar, cornstarch, vanilla and lemon juice. Beat until completely smooth, scraping down the sides and bottom of the bowl as needed.
  4. Pour the filling over the crust and spread evenly.
  5. Bake for 50 minutes without opening the oven door. Turn the oven off and let the cheesecake sit inside for 10 minutes. The center will be slightly jiggly — this is expected; it will firm up as it cools.
  6. Remove from the oven and let cool at room temperature for about 15 minutes. Refrigerate for at least 8 hours, preferably overnight, before slicing. The texture is most stable after about 24 hours.
