Instructions

  1. In a large bowl, whisk together the almond flour, oat flour, tapioca starch, baking powder, sea salt, basil, oregano, garlic powder, red pepper flakes, and black pepper until evenly combined.
  2. Fold in the yogurt and honey with a rubber spatula until a soft dough forms. If you’re using sundried tomatoes, fold them in now.
  3. Chill the dough in the refrigerator for 15 minutes to make it easier to handle.
  4. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Lightly dust a clean work surface with oat flour.
  5. Turn the chilled dough onto the floured surface. Knead briefly and shape into one smooth ball, then divide the dough into 7 equal portions.
  6. Roll each portion into a log about 8–9 inches long, adding a little oat flour if the dough is sticky. Shape each log into a pretzel by folding and twisting the ends.
  7. Place the pretzels on the prepared baking sheet. Brush each pretzel with the egg wash and sprinkle with shredded mozzarella.
  8. Bake for 25–27 minutes, until the cheese is melted and the bottoms are lightly browned. Allow to cool 5–10 minutes before serving. Serve warm with marinara, pesto, or cheese dip.
