Enjoy a spicy appetizer with these jalapeño popper stuffed mushrooms. Button mushrooms are filled with a creamy, tangy jalapeño cream cheese mixture, topped with melted cheddar and Parmesan, then baked until bubbly. They make a great starter for parties and holidays, or a satisfying snack any day of the week.
These stuffed mushrooms are quick to assemble and can be prepared ahead of time. Assemble them, keep covered in the refrigerator, and bake just before serving for hot, fresh bites. They’re flavorful, low-carb, and addictive — once you try one, you’ll likely reach for another.

These mushrooms combine the heat of jalapeños with creamy cheese and a crispy, golden top. Serve them warm on a platter garnished with chopped chives or crispy bacon bits for an extra savory touch. They pair well with simple greens or as part of a larger appetizer spread.
WHAT MUSHROOMS ARE USED FOR STUFFING?
For most stuffed mushroom recipes, white button mushrooms are ideal. Their caps are the right size for single-bite appetizers, and when the stems are removed they leave a neat cavity for stuffing. Choose mushrooms that are firm and dry for the best texture after baking.
If you want a larger, more substantial dish, Portobello mushrooms work well as a main course. They have a big cap that holds more filling — just remove the stem and scrape out the gills if you prefer a milder flavor before stuffing.

TIPS FOR MAKING JALAPEÑO POPPER STUFFED MUSHROOMS
- Since mushrooms release moisture while baking, blot them lightly with a paper towel after they come out of the oven to avoid a watery topping.
- These can be assembled ahead and refrigerated. Cover the tray with plastic wrap and bake just before serving for best results.
- Soften the cream cheese to room temperature so the filling mixes easily and is simple to spoon into the mushroom caps.
- For added flavor, stir in cooked, chopped bacon or swap a portion of the Cheddar for smoked cheese.
- Let the mushrooms cool for a few minutes after baking — the filling can be very hot right out of the oven.
- If you need to reheat leftovers, warm gently in a low oven or microwave until heated through to preserve texture.

Ingredients
- 8 button mushrooms
- 4 oz cream cheese, softened
- 2 oz Cheddar cheese, grated (reserve half for topping)
- 1 oz Parmesan cheese, grated
- 2 jalapeño peppers, de-seeded and chopped
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- Preheat your oven to 200°C (400°F). Gently wipe the mushrooms clean with a damp cloth or paper towel and remove the stems to create space for the filling.
- In a medium bowl, combine the softened cream cheese, half of the grated Cheddar, the Parmesan, chopped jalapeños, garlic powder, salt and pepper. Mix until smooth and easy to spoon; if needed, let the cream cheese sit at room temperature a few minutes longer.
- Spoon or pipe the cheese mixture into each mushroom cap, pressing gently so the filling sits neatly in the cavity.
- Sprinkle the remaining grated Cheddar over the filled mushrooms for a golden, melty topping.
- Bake the mushrooms in the preheated oven for 20–25 minutes, until the cheese is bubbly and lightly browned.
- Remove from the oven and let the mushrooms rest for about 5 minutes before serving to avoid burning from the hot filling.
- Garnish with chopped chives or cooked bacon bits if desired, and serve warm.
