Ingredients
- 1 cup dry chickpeas (soaked overnight)
- Juice of half a lemon
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
Instructions
- Soak the dry chickpeas overnight in plenty of water so they rehydrate fully.
- The next day, preheat the oven to 390°F (about 200°C).
- Drain and dry the chickpeas thoroughly using a clean kitchen towel or paper towels. Removing surface moisture helps them crisp up in the oven.
- Place the dried chickpeas in a bowl and add the lemon juice and the spices. Mix well by hand, ensuring the spices evenly coat the chickpeas.
- Arrange the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Use the middle oven rack for even heat circulation.
- Roast for 40 to 45 minutes, shaking the pan once or twice during cooking for even browning. Keep an eye on them toward the end to prevent burning.
- Remove from the oven and let cool slightly — they will crisp further as they cool. Taste and adjust seasoning if desired before serving.
