Kahlua Cheesecake Recipe with Coffee Liqueur

I adapted this version after spotting a sale on cream cheese and experimenting with a chocolate-café flavor profile to please both chocolate and coffee lovers. The filling is a smooth, chocolaty cream cheese base with a subtle coffee and Kahlua note, set on a chocolate cookie crust. Baking it in a water bath and allowing it to cool slowly prevents cracks and yields a dense, silky texture. It freezes and chills well, and a small slice goes a long way — it’s rich and satisfying without being overly sweet.

Ingredients

1 cup chocolate cookie crumbs
1/4 cup butter, softened
2 tablespoons white sugar (for crust)
1/4 teaspoon ground cinnamon

3 (8 ounce) packages cream cheese, softened
1 cup white sugar (for filling)
3 eggs, room temperature
8 (1 ounce) squares semisweet chocolate
2 tablespoons whipping cream
1 cup sour cream
1/4 teaspoon salt
2 teaspoons instant coffee granules dissolved in 1/4 cup hot water
1/4 cup coffee-flavored liqueur (Kahlua)
2 teaspoons vanilla extract

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Prepare a 9- or 10-inch springform pan by buttering the bottom and sides.
  2. Make the crust: Combine the chocolate cookie crumbs, softened butter, 2 tablespoons of white sugar, and the cinnamon. Mix until evenly moistened, then press the mixture firmly and evenly into the bottom of the prepared springform pan. Set aside.
  3. In a medium bowl, beat the softened cream cheese until smooth. Gradually add 1 cup white sugar and beat until well blended. Add the eggs one at a time, mixing on low speed after each addition until the batter is very smooth.
  4. Melt the semisweet chocolate with the 2 tablespoons of whipping cream using a double boiler or a heatproof bowl set over simmering water. Stir until the chocolate is fully melted and the mixture is glossy and combined. Allow to cool slightly.
  5. Add the melted chocolate to the cream cheese mixture and blend until uniform. Stir in the sour cream and salt, then add the dissolved coffee, 1/4 cup coffee liqueur (Kahlua), and vanilla extract. Beat gently just until smooth — avoid overmixing.
  6. Pour the filling over the prepared crust and spread gently to level. Place the springform pan inside a larger roasting pan. Pour hot water into the roasting pan to come about halfway up the sides of the springform pan to create a bain-marie (water bath).
  7. Bake in the center of the preheated oven for about 45 minutes. The center should still be slightly soft; it will finish setting as it cools. Be careful not to overbake.
  8. When the baking time is complete, turn off the oven and crack the oven door. Leave the cheesecake in the oven as it cools for approximately 45 minutes—this gradual cooling helps prevent cracks. Remove the cheesecake from the water bath, unwrap if you used foil, and chill in the refrigerator for at least 12 hours or overnight before removing the springform ring and serving.

Notes and Tips

– If you cannot find plain chocolate wafer crumbs, finely crushed chocolate sandwich cookies (with the filling removed) work well for the crust. Scraping out the filling before crushing will keep the crust from becoming too sweet or oily.
– For the smoothest texture, bring the cream cheese and eggs to room temperature before mixing. Melt the chocolate gently and allow it to cool slightly before adding to the batter so it does not overheat the cream cheese.
– The coffee and Kahlua are intentionally balanced so the cake tastes of chocolate first with a warm coffee undertone. Adjust the coffee strength to your preference by using slightly more or less dissolved instant coffee.
– Leftovers keep well refrigerated for up to 4–5 days. Cheesecake also freezes nicely: wrap tightly and freeze for up to one month; thaw in the refrigerator overnight before serving.
