Chunky Sweet Potato Kale Chili

Ingredients
- 1 large sweet potato (about 12–14 ounces) or two small sweet potatoes
- 1 (15-ounce) can dark red beans, rinsed and drained
- 1 (14.5-ounce) can diced or crushed tomatoes
- ½ medium red onion, chopped
- 1 clove garlic, minced
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 cup water (plus more to adjust consistency)
- 2 cups curly kale or lacinato (Tuscan) kale, stemmed and chopped
- Freshly ground black pepper, to taste
- Optional: avocado slices or a squeeze of lime for serving
Directions
- Prick the sweet potato several times with a fork. Microwave on high for 4–5 minutes, or until the potato is tender when pierced (it can be slightly firm in the center). Set aside to cool.
- While the potato cools, warm a small frying pan over medium heat and lightly spray or coat with a small amount of oil. Add the chopped red onion and cook, stirring occasionally, until caramelized and golden.
- In a large saucepan, combine the rinsed beans, canned tomatoes, caramelized onion, minced garlic, cinnamon, nutmeg and 1 cup of water. Heat over medium-high until just simmering.
- Peel the cooled sweet potato and cut into medium-sized chunks. Add the sweet potato pieces to the pot and stir to combine.
- Cover and reduce heat to low–medium. Let the chili simmer for about 15 minutes, stirring occasionally. Check the consistency every few minutes; if it becomes too thick, add water in 1–2 tablespoon increments until you reach the desired thickness.
- About 10 minutes into simmering, stir in the chopped kale. Cook until the kale is fully wilted and tender, another 3–5 minutes.
- Remove from heat and taste, adjusting pepper or seasoning as needed. Serve warm, topped with optional avocado slices or a squeeze of lime.
Note: If you’re in a rush, you can skip caramelizing the onion—this chili is still delicious without it, though the caramelized onion adds a deeper flavor.
