This festive and delicious fresh cranberry skillet cake is the perfect winter snack cake. Studded with tart fresh cranberries and white chocolate chips, it bakes up tender and moist and can be made and served right in your cast iron skillet.
One afternoon, after my oldest finished school, the kids were wandering through the kitchen, trying to figure out how to fill the time. They had already cleaned their rooms, so when I suggested baking, they brightened immediately. We had fresh cranberries on hand and decided to try a cranberry skillet cake I’d been wanting to test. The result was a big hit with everyone.
After making a small tweak, this version earned a permanent spot in our repertoire. The kids kept asking for seconds and even enjoyed leftovers for days—unusual, because dessert rarely lasts that long in our house.

This cake mixes easily by hand—no need to haul out an electric mixer. I often have little helpers, so we use a fork and a rubber spatula to combine the batter. If you prefer a mixer, you can use one, but there’s no creaming step; the method is intentionally simple.
The original version included nuts, but I usually omit them. If you prefer nuts, swap half or all of the white chocolate chips for chopped walnuts, pecans, or slivered almonds. To bring a seasonal citrus note into the cake, add a teaspoon or two of fresh orange zest; that variation moves the flavor profile closer to cranberry-orange bars and pairs beautifully with the tart cranberries.
Can I use dried cranberries?
Short answer: you can, but the result will be different. Dried cranberries lack the fresh tartness that brightens the cake, so the texture and balance will change. If you choose dried cranberries, reduce the granulated sugar in the batter to around 2/3 to 3/4 cup to avoid an overly sweet cake. Fresh or frozen cranberries give the best fresh-tart contrast to the white chocolate.

Why use a cast-iron skillet?
A cast-iron skillet is one of the most useful pieces of cookware in the kitchen. It transitions easily from stovetop to oven to table, and when well seasoned it performs like a reliable nonstick pan. If you don’t have a cast-iron skillet, a well-greased 8- or 9-inch cake pan is an acceptable substitute—the skillet simply makes for a cozy, rustic presentation.

This festive fresh cranberry skillet cake is perfect for winter. Tart cranberries and pockets of white chocolate create a tender, moist snack cake that’s delicious served warm from the skillet.
Ingredients
- 2 cups fresh cranberries, washed and dried
- 1 cup white chocolate chips
- 2 teaspoon fresh-grated orange or lemon zest (optional)
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1–2 tablespoons turbinado or coarse sugar for topping (optional)
Instructions
- Preheat the oven to 350°F. Have a 9-inch cast-iron skillet ready and seasoned. If your skillet needs extra protection, grease it and line the bottom with parchment.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and zest (if using).
- In a separate bowl, whisk the cooled melted butter with the eggs and vanilla until combined.
- Stir the wet ingredients into the dry ingredients just until no large pockets of dry flour remain. Fold in the cranberries and white chocolate chips with a spatula.
- Transfer the batter to the prepared skillet, smooth the top, and sprinkle with turbinado or coarse sugar if desired.
- Bake for 35–40 minutes, until a toothpick inserted in the center comes out clean or with only a few moist crumbs.
- Let the cake cool in the pan for 10–15 minutes to set before slicing. Serve warm or at room temperature. Store leftovers at room temperature for a day or two, or covered in the refrigerator for up to a week.
Notes
- Frozen cranberries can work in a pinch—no need to thaw; just add a few extra minutes to the bake time.
- A well-seasoned skillet reduces sticking. If your skillet isn’t fully seasoned, brush the pan with a little extra butter before adding batter and re-season the pan afterward.
- If using dried cranberries, reduce the sugar in the batter to about 2/3–3/4 cup to compensate for their added sweetness.
