Author: Mila Furman
Description
Discover the simplicity and decadence of no-churn ice cream. This creamy, silky ice cream is studded with whiskey-infused caramelized apples and crunchy shortbread, finished with a glossy, salted whiskey caramel. It’s an indulgent dessert that captures the warm spices and bright tartness of apple pie in a scoopable, make-at-home treat.

Story Behind the Recipe
No-churn ice cream transformed how I think about homemade frozen desserts. It’s remarkably simple: whipped cream folded into sweetened condensed milk, then flavored and frozen without an ice cream machine. These whiskey caramelized apples came from an experiment while creating savory grilled cheeses—apples with cheese felt like a natural pairing. I infused the apples with a splash of whiskey for a smoky, earthy depth, then imagined them folded into ice cream under a ribbon of salted caramel. The result evoked a drunken apple pie with crunchy shortbread bites, and it quickly became a favorite among friends and family.

Serve this for gatherings, birthdays, or any moment that calls for something special. It’s rich and memorable, with a balance of tart apple, buttery cookie, and warm whiskey caramel.
Ingredients
- Ice Cream Base
- 1 pint heavy whipping cream
- 1 can sweetened condensed milk (14 oz)
- 2 Granny Smith apples, peeled, cored and thinly sliced
- 2 tbsp granulated sugar
- 2 tbsp butter
- 2 tbsp water
- Zest of half an orange
- 2/3 cup whiskey
- 3/4 cup crushed shortbread cookies
- Whiskey Salted Caramel
- 2 cups granulated sugar
- 2 tbsp water
- 2/3 cup Scotch whisky (or preferred whiskey)
- 6 tbsp heavy cream
- Pinch of salt
Instructions
- Prepare the Whiskey Apples
- In a skillet, combine butter, water, sugar, and whiskey over medium heat until the butter melts. Be careful—alcohol can ignite briefly.
- Add the sliced apples and orange zest, bring to a gentle boil, then reduce to a simmer.
- Cook for about 10 minutes, stirring frequently, until the apples are tender and glazed. Remove from heat and let cool completely.
- Make the Ice Cream Base
- Whip the heavy cream to stiff peaks using a stand mixer or electric hand mixer. Watch closely to avoid overwhipping into butter.
- Gently fold the sweetened condensed milk into the whipped cream until fully combined and smooth.
- Once the whiskey apples have cooled, fold them and the crushed shortbread cookies into the ice cream base, distributing evenly but leaving some larger chunks for texture.
- Transfer the mixture to a freezer-safe container (a bread pan or bowl works well). Smooth the top, cover, and freeze until firm, about 4 hours or overnight for best texture.
- Serve scoops drizzled generously with the salted whiskey caramel.
- Make the Salted Whiskey Caramel
- In a dry heavy saucepan over moderate heat, cook the sugar and 2 tbsp water without stirring until the sugar begins to melt at the edges.
- Gently swirl the pan or use a pastry brush to encourage even melting. Cook until the sugar turns a deep golden amber—this happens quickly, so stay attentive.
- Remove the pan from heat and carefully add the whiskey, then the heavy cream and a pinch of salt. The mixture will steam and bubble intensely; keep calm and stir until smooth. If the caramel hardens briefly, return to low heat and stir until it dissolves.
- Let the caramel cool, then transfer to a jar and refrigerate. Warm slightly before drizzling over frozen ice cream for easier pouring.
Notes & Tips
Note 1: Granny Smith apples are preferred for their bright tartness, which contrasts nicely with caramel. Sweeter apple varieties may make the final dessert overly sugary.
Note 2: Use your favorite shortbread cookies or make a homemade shortbread for the best flavor. Crushed shortbread adds a buttery crunch reminiscent of pie crust.
Note 3: For smooth caramel, use a very clean, dry pan and avoid stirring the sugar aggressively while it melts—this helps prevent crystallization.
Note 4: The heavy cream added to caramel stabilizes it, keeping the sauce pourable and glossy once cooled.

Serving Suggestions
Serve thick scoops in chilled bowls or cones and finish with generous ribbons of warm salted whiskey caramel. Add a few extra crushed shortbread crumbs on top for crunch. This ice cream pairs well with spiced baked apples or a simple slice of warm pie for a full dessert experience.
