Naturally sweet bananas, chewy oats and a touch of cinnamon and nutmeg make these cookies irresistible and comforting.
Ingredients
  • 1 1/2 cups sifted all-purpose flour
  • 1 cup granulated sugar
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp nutmeg
  • 3/4 tsp cinnamon
  • 3/4 cup vegetable shortening
  • 1 egg, well beaten
  • 2–3 bananas, mashed
  • 1 3/4 cups old-fashioned oats
  • 2 cups chocolate chips
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Line a cookie sheet with a silicone baking mat or parchment paper and set aside.
  3. In a large bowl, whisk together the sifted flour, sugar, baking soda, salt, nutmeg and cinnamon.
  4. Add the shortening and use a pastry cutter (or fork/fingertips) to cut it into the flour mixture until it resembles coarse crumbs.
  5. Mash the bananas until smooth.
