A Delicious One-Pot Chicken and Vegetable Dish
You’ll fall in love with this version of Chicken Scarpariello. It takes a bit of time and attention, so plan to make it for a cozy weekend meal, a cold-night dinner, or a date-night when cooking is part of the fun. The technique is simple: brown the chicken, soften the vegetables, reduce the wine and vinegar to concentrate the flavors, then finish everything together in the oven so the sauce melds and the skin crisps.
The dish starts by softening onions, peppers and garlic in a heavy pan, then creating a white wine reduction that becomes the base of a bright, slightly tangy pan sauce. Sliced sausage and sweet peppadew peppers add savory and tangy notes, while fresh rosemary gives an aromatic finish. Chicken thighs remain moist and juicy with a nicely browned crust when finished this way.

For a complete plate, roast a pan of baby new potatoes and serve them alongside to absorb the delicious sauce. This meal stores and reheats well, so leftovers are wonderful over greens, quinoa or cauliflower rice.
You’ll love this dish because:
- Deep, layered flavor: Browning the chicken and cooking the vegetables in the same pot builds savory depth that carries through the final braise.
- Moist chicken thighs: Thighs stay juicy while achieving a crisp skin when finished in the oven.
- One-pot simplicity: Most of the cooking happens in a single dutch oven or heavy pan, which keeps cleanup minimal.
- Great leftovers: Reheat and serve the chicken and vegetables over salad, grain bowls or cauliflower rice for easy next-day meals.
A Perfect Baked One-Pot Meal
I prepare this recipe in a steam-convection oven that combines steam and convection heat for moist results and even browning. Steam is a healthy, efficient way to cook meats and vegetables, and using a quality oven makes finishing the braise quick and consistent. If you don’t have a steam oven, a conventional oven set to bake will work well—just monitor the chicken so the skin browns without drying out.

Cooking at home has made it easier to enjoy restaurant-quality meals without going out. The combination of a flavorful pan sauce and perfectly roasted chicken makes this a memorable, comforting main course.
How to Make Chicken Scarpariello
Step 1: Pat chicken thighs dry and season generously with sea salt and black pepper. Heat olive oil in a large dutch oven or heavy skillet over medium-high heat. Place the thighs skin-side down and brown until the skin is deep golden, about 6–8 minutes. Remove and set aside. Add the sliced sausage to the pan and brown briefly, about 3–4 minutes; set aside with the chicken.
Step 2: Lower the heat to medium and add sliced onions, peppers and minced garlic. Season the vegetables with salt and pepper and sauté until they are soft and starting to caramelize—this can take 10–12 minutes total. The caramelized vegetables create richness in the sauce.

Step 3: Add the white wine vinegar first and let it simmer briefly to mellow the sharpness. Then pour in the white wine and reduce the liquid by half so the flavors concentrate. Add chicken broth and continue simmering until the mixture reduces slightly and becomes saucy.
Step 4: Remove the pot from the heat and stir in the peppadew peppers (or sweet pickled peppers) and the browned sausage. Nestle the chicken thighs back into the vegetables, skin side up so the skin can brown in the oven. Tuck a few sprigs of fresh rosemary between the pieces for aroma.

Step 5: Transfer the dutch oven to a preheated oven and bake until the chicken finishes cooking and the skin crisps, about 25–35 minutes at 350°F (adjust time for larger pieces). Serve the chicken and vegetable mixture over rice, quinoa, cauliflower rice, or with roasted baby potatoes to soak up the sauce.

Optional potatoes: Toss baby new potatoes in olive oil, season with salt and pepper, and roast on a baking sheet at 425°F for 20–30 minutes until golden and tender. Bake them while you prepare the braise so they’re ready when the chicken comes out of the oven.

How to Serve Chicken Scarpariello
Chicken Scarpariello is an Italian-American classic featuring roasted chicken, sausage and peppers in a sweet-and-tangy pan sauce. Each step matters: brown the chicken well, allow the peppers and onions to soften fully, and reduce the wine and vinegar to concentrate and balance the acidity. The result is a rich, bright sauce and succulent chicken.

The dish is delicious on its own, but pairing it with a side that soaks up the sauce makes it truly comforting. Try cauliflower rice for a low-carb option, wild rice or quinoa for a heartier plate, or roasted baby potatoes for classic comfort.
Ingredients
Roasted Baby Potatoes
- 1 1/2 pounds cocktail (baby) potatoes
- 1 tablespoon olive oil
- Sea salt and black pepper, to taste
Chicken Scarpariello
- 8 chicken thighs
- Sea salt and black pepper, to taste
- 2 tablespoons olive oil
- 3 sweet Italian sausages, precooked and sliced
- 1 yellow onion, cut in strips
- 1 red bell pepper, cut in strips
- 3 cloves garlic, minced
- 1 cup white wine
- 1/4 cup white wine vinegar
- 1 cup chicken broth
- 1/2 cup peppadew peppers or sweet pickled peppers
- 3 sprigs fresh rosemary
Instructions (Condensed)
- Preheat oven and, if roasting, start the baby potatoes at 425°F while you prep the braise.
- Season and brown the chicken thighs skin-side down in olive oil; remove and set aside.
- Brown the sliced sausage briefly and set aside.
- Sauté onions until they soften, add peppers and garlic and continue until vegetables are tender and starting to caramelize.
- Add white wine vinegar to deglaze briefly, then white wine and reduce by half. Add chicken broth and simmer to concentrate the sauce.
- Stir in peppadew peppers and sausage, nestle the chicken back into the pan, top with rosemary, and transfer to the oven. Bake until chicken is cooked through and skin is browned.
- Serve with roasted potatoes, rice, quinoa, or cauliflower rice. Spoon extra sauce over the plate.
Notes
This dish benefits from patience: allow the onions and peppers to soften fully and let the wine and vinegar reduce to concentrate flavor. Any chicken pieces will work—adjust baking time for larger cuts like bone-in breasts. Leftovers reheat well and make excellent next-day lunches over greens or grains.
