A quick pizza dough uses a larger amount of yeast and slightly warmer liquid to accelerate fermentation, so you can have pizza ready in roughly two hours rather than many hours or overnight.
This approach is ideal when you decide you want pizza the same day but don’t have time for a long, slow rise. If you do have more time, a low-yeast, long-proof method will give more depth of flavor, improved texture, and easier digestion because the yeast has more time to work on the dough.
Longer-proofed recipes such as Neapolitan-style dough or other standard pizza doughs are great when planning ahead, but this quick method is a reliable alternative when time is limited.
Ingredients and substitutions for quick pizza dough

Flour
All-purpose flour makes a lighter, more tender crust. Bread flour will give a chewier texture and more structure. Either works well in this recipe.
Yeast
Instant dry yeast is recommended for consistent, reliable results. You can use active dry yeast instead, but you’ll generally need about three times the amount of fresh yeast if substituting fresh.
Note: Avoid rapid-rise or “quick-rise” yeast for recipes that include a second short proof; it can behave unpredictably in those cases.
Water
Use lukewarm water (around 85°F / 30°C) to encourage fast yeast activity. Cold water slows proofing; water hotter than about 120°F / 50°C can kill the yeast.
Salt
Sea salt or kosher salt works best—salt improves flavor and tightens the gluten structure.
Olive oil

1. Make the dough
In a large bowl, dissolve the yeast in lukewarm water with the sugar. If the yeast does not activate or dissolve, replace it—dead yeast won’t proof.
Add the flour, salt, and olive oil, and stir until a shaggy dough forms. Transfer to a lightly floured surface and knead for about 5 minutes until smooth and elastic. If the dough is tacky, dust your hands and the work surface with a little more flour.

2. Quick proofing
Lightly oil a large bowl, place the dough inside, brush the surface with oil, and cover with a damp cloth. Set the bowl in a warm place and let the dough rise for about 1 hour or until doubled in volume. A turned-off oven with only the light on makes a conveniently warm proofing spot.

Divide the risen dough into 3 or 4 pieces depending on the pizza size you want. Shape each piece into a smooth ball, arrange on a parchment-lined tray, and cover. Let rest for 30 minutes in a warm spot while you preheat the oven to 480°F (250°C).
3. Shape the pizza
On a lightly floured surface, flatten a dough ball and press outward with your fingertips from the center, leaving a puffy rim if you like a defined crust. For a thinner base, roll with a rolling pin.

4. Bake the pizza
You can bake on a baking tray or a preheated pizza stone:
- Baking tray: Place the shaped disc on a tray, add toppings (for example: marinara sauce, fresh mozzarella, grated parmesan, basil, and a drizzle of olive oil), and bake on the center rack at 480°F (250°C) for 6–8 minutes until the crust is golden and cheese is melted.
- Pizza stone: Preheat the stone in the oven for 30 minutes. Dust a peel with flour, load the pizza onto the peel, and slide it onto the stone. Bake 5–7 minutes until done.


Storage & Make Ahead
Make ahead: Cover the dough bowl tightly and refrigerate for 8–24 hours for a slow, cold proof. Remove and let warm to room temperature for about 1.5 hours before shaping.
Freezing: After the first rise and once shaped into balls, freeze dough balls in freezer bags for up to 3 months. Thaw overnight in the refrigerator, then bring to room temperature and allow to double before shaping and baking.
