Ingredients

  • 1 1/2 cups nonfat milk
  • 1 1/2 cups water
  • 2 cups quick oats
  • 2 medium Honeycrisp or Pink Lady apples (or other firm, sweet-tart apples), peeled and chopped (to equal about 2 1/2 – 3 cups)
  • 1/2 cup unsweetened applesauce
  • 1/2 cup raisins or dried cranberries
  • 1/2 cup chopped pecans
  • 6 tablespoons brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla

Instructions

  1. Bring the milk and water to a boil in a saucepan large enough to prevent boil-overs. While the liquid heats, have the remaining ingredients ready — the rest of the cooking moves quickly.
  2. When the liquid boils, reduce heat to low. Add the oats, then stir in the apples, applesauce, raisins or cranberries, pecans, brown sugar, cinnamon, salt, and vanilla. Cook 1–2 minutes more, stirring, until the oats are tender and the mixture has thickened to your preference. If the oatmeal becomes too thick while you’re adding ingredients, either remove from heat briefly or add a little extra milk to reach the desired consistency.
