Paleo Whole30 Cabbage Roll in a Bowl is an easy, flavorful way to enjoy the classic cabbage roll flavors without the hassle of rolling. This quick, wholesome dinner is naturally gluten free and dairy free, and works well cooked in an Instant Pot or on the stove. It delivers the satisfying mix of seasoned beef, tomato, and cabbage in a single pot.

Full disclosure: I don’t love cabbage on its own, but this dish converts even cabbage skeptics. My dad adores it, and it’s a favorite for easy family dinners and meal prep. The cabbage cooks down considerably, so while the recipe calls for a large head of cabbage (about 16 cups chopped), the finished dish is nicely concentrated and hearty.

The texture falls somewhere between a thick soup and a saucy stir-fry. There isn’t a lot of liquid, so you can leave it as a robust one-bowl meal, add a little broth to make it more like a soup, or reduce the liquid further for a drier skillet-style version. It’s versatile and forgiving — adjust to how you like to eat it.

This recipe makes a generous batch, which is great for leftovers, meal prep, or feeding a crowd. If you want a more traditional cabbage roll experience, you could stir in cooked rice at the end, but the combination of beef and cabbage is filling enough on its own for most people.

You’ll appreciate how straightforward this recipe is: brown the beef, add aromatics and tomatoes, then fold in the cabbage and cook until tender. Instant Pot speeds things up, but stove-top instructions are included below for those without one. This dish is flavorful, vegetable-forward, and a reliable weeknight meal.

Ingredients

  • 2 pounds grass-fed ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 large onion, diced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes
  • 1/4 cup coconut aminos
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1 large head of cabbage, core removed and chopped (about 16 cups chopped)

Instructions

  • Place the beef, garlic powder, and salt in the Instant Pot and select the sauté setting. Cook until the beef is browned, breaking it up and stirring as needed, about 6 minutes.
  • Add the diced onion, tomato sauce, diced tomatoes, coconut aminos, paprika, and oregano. Stir to combine. Lock the lid, close the valve, select manual pressure, and set the time to 10 minutes.
  • When cooking finishes, perform a quick release of the pressure and remove the lid.
  • Stir in the chopped cabbage, pushing it down so it fits without exceeding the max fill line. Lock the lid again, close the valve, select manual pressure, and set the time to 4 minutes.
  • When done, quick release the pressure, remove the lid, and stir. Taste and adjust seasoning if needed. Serve hot.

Stove-top instructions

  • In a large stockpot over medium heat, cook the beef with garlic powder and salt until browned. Add the onion, tomato sauce, diced tomatoes, coconut aminos, paprika, and oregano. Cover and simmer until the onion softens, about 10 minutes. Stir in the chopped cabbage, cover, and cook until the cabbage is tender and reduced, about 10 more minutes. Adjust seasoning and serve.

Tips, Variations, and Storage

Ingredient notes: use a good-quality ground beef for flavor. Coconut aminos provide a savory, slightly sweet umami note in place of soy sauce—feel free to substitute with a gluten-free soy alternative if not strictly avoiding soy.

Variations: add diced bell pepper or shredded carrots for extra color and nutrients. If you prefer a tangier profile, stir in a tablespoon of apple cider vinegar or a splash of lemon juice at the end. To make a milder version, reduce the paprika or omit it.

Make-ahead and storage: this dish stores well in the refrigerator for 3–4 days and reheats easily on the stove or in the microwave. It also freezes well—cool completely before transferring to freezer-safe containers for up to 3 months. Thaw overnight in the refrigerator before reheating.

Serving suggestions: serve the cabbage roll in a bowl with a spoonful of extra tomato sauce if you like it saucier, or pair it with cauliflower rice for a heartier meal that stays paleo/Whole30-friendly. Garnish with fresh herbs, such as chopped parsley, if desired.
